Vegetarian Recipes

Chocolate Peanut Butter Cup Smoothie
Bananas are a good subsitution for ice cream because they have the same consistency when blended (sorta) and not too much flavor. Here, they're used as a smoothie base.

Ingredients:

  • 3 cups chocolate soy milk
  • 2 cups peanut butter
  • 1 banana
  • ice

    Directions:
    Blend ingredients together in a blender.

    That's it! Drink it and enjoy your meatless smoothie. Not that smoothies usually have meat in them...blended steak smoothie? You know what we mean.

    Tofu Scramble
    This is an animal-friendly substitute for scrambled eggs. The spices not only add flavor, but they also color the tofu yellow to mimic eggs.

    Ingredients:

  • 1/2 block of firm tofu
  • 1 tbsp soy sauce
  • pinch of ground turmeric
  • pinch of paprika
  • olive oil

    Directions:
    1. Drain the water from the tofu and crumble it into a bowl.
    2. Add soysauce and spices. Stir together. Be careful with the turmeric--it stains everything yellow!
    3. Heat a frying pan on medium and add olive oil to the pan (just like you would to make scrambled eggs). Let the oil heat up.
    4. Pour the tofu mixture into the pan and cook just like scrambled eggs.

    You can add things to the scramble just like you would an omelet. Try adding chopped onions, garlic, rosemary or basil.

    Soybean Pilaf
    Soybeans are a great way to get that protein you're missing from meat! You can use any vegetables you want in this recipe. Here we've used a favorite veggie combination.

    Ingredients:

  • 2 tbsp. uncooked rice
  • 2/3 cup shelled green soybeans
  • 1/3 cup vegetable broth
  • 1/2 small red onion
  • 1/2 medium carrot
  • 1/2 large celery stalk
  • 1 clove garlic
  • 1 oz. fresh mushrooms
  • olive oil
  • sliced almonds

    Directions:
    Note: You can find frozen shelled green soybeans, also called "edamame", in the frozen foods section. Boil the soybeans about 5 minutes in just enough water to cover them, then drain and put them aside.

    1. Rinse and chop your veggies. Mince the garlic.
    2. In a medium saucepan, heat olive oil on medium heat and saute garlic, onion, carrot and celery for about 5 minutes.Then add mushrooms, rice and broth.
    3. Bring to a boil, then lower the heat and cover the pan, letting it simmer for about 20 minutes.
    4. Stir in the soybeans and mix thoroughly. Cover and let stand for a few minutes to let the flavors blend
    5. Top with almonds and serve!

    Vegetarian Stuffed Squash
    Who knew that you could make healthy food in a microwave? That's right, the microwave isn't just for making soy-cheese nachos and frozen dinners. But those are good too.

    Ingredients:

  • 1/2 tbsp. raisins
  • 1 tbsp. walnuts
  • 5 1/2 oz. firm tofu
  • 1/2 medium acorn or butternut squash
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 cup unsweetened applesauce

    Directions:
    1. Pierce the skin of the squash in several places with a sharp knife. Microwave it uncovered on high for 4 to 5 minutes, until the skin easily yields to fork pricks.
    2. Remove squash from oven and let it rest for a minute. Then cut it in half and scoop out the seeds with a spoon. You can throw out the seeds, because, ick, they're sticky and weird.
    3. Drain and cut the tofu into small cubes and mix it with applesauce, raisins, walnuts, spices and tofu.
    4. Place cut squash halves in a microwave-proof dish and fill it with the mixture.
    5. Cover lightly and microwave for 4-5 more minutes. Let it cool a few minutes before serving!

    Here are some tips for adapting recipes you may already have into vegetarian recipes:

  • Tofu will absorb the flavors of whatever it's cooked in, so it can take on many different personalities. Use tofu instead of meat when a recipe calls for chicken, beef or pork, and cut the tofu to mimic the cut of the meat.
  • You can replace eggs in most baking recipes with applesauce. (1/4 cup applesauce=1 egg)
  • Substitute soy, rice or nut milk for dairy milk.
  • Instead of butter, use margarine or soy butter.
